On this page I will put things that do not really fit in with all the others. The first recipe is a perfect example of that.
This recipe can be a dessert, breakfast, snack or side dish. The first time I had it, Kevin's brother was staying with us for Thanksgiving and he made it. I have never liked yams and didn't expect to this time either, but now it is served every year. I changed it slightly to use a little less sugar and to raise the healthy level. With the yams, the fiber content is pretty high.

Yam Mixture
2 eggs 1 cup white sugar 1/2 stick margarine or butter 1 tsp each cinnamon, nutmeg 3/4 cup evaporated milk 1 large can yams, rinsed |
Topping
3/4 stick margarine or butter, melted 1 cup crushed corn flakes 1/2 cup brown sugar 1/2 cup walnuts or pecans (optional) |
Beat together eggs, butter and sugar until smooth. Add cinnamon, nutmeg and milk and mix for about 30 seconds. After rinsing the yams and letting them drain, mash them in a bowl and add to the mixture. Pour into a 13 x 9 baking dish.
For topping - mix the topping ingredients together, tossing well to distribute the melted butter. Sprinkle over the yam mixture. (This usually covers the whole mixture when I make it.) I also like to sprinkle a little bit more cinnamon over the top of this for a little extra flavor.
Bake at 400 for 25 minutes. Let sit for 10 minutes before you start serving to help the yams "set".
